You'll need 2 scales - a kitchen set for your individual items and a bathroom set for the whole rucksack. Naturally you'll want it all in a spreadsheet :D

What you want is a nice pair of hanging scales like you would use for weighing fish.  That way you can suspend your entire rucksack from it :)  I actually rarely weigh my entire rucksack, so I couldn't tell you what weight I normally carry.  I just keep an eye on the weight of individual items and try to bring as little as possible, seems to work!  Its that classic thing - if you keep the weight of your shelter, sleeping bag, rucksack and cooking system down then you will probably end up with a light enough pack.

We should all trade spreadsheets someday ;)

Don't forget to add functions to your spreadsheet so it can calculate the weight of your pack automatically based on what items you've selected for the trip ;D

Plus additional columns to take into account if you're gear sharing between 2 people.
