Sneaking into June (2nd) but you can't beat the Portrush Raft Race (http://www.portrushraftrace.co.uk/).  For 20 lads, build three or four rafts, bring some eggs and flour and off you go.  We did it for mine (a while ago!) and it was great fun.  Plenty of eateries and night-life to carry the party on.

best stag I’ve ever been at was spend cruising Lough erne on a cruiser!!
you still get the "out in nature" feeling but from the comfort of a 10 berth cruiser. There’s even a mooring at Asda for refilling the fridge with beer.

Bit pricey but it’s worth every penny in my book.
