Bannock

I'd quite like to try making some bannock or related sweet type bread on an open fire but I'm totally useless when it comes to cooking. Can anyone post me instructions suitable for a complete plonker.

Use the 3 2 1 method, 3 handfulls of flour, 2 handfulls of milk powder and 3 fingers of baking powder mix together with water and add whatever you want.

3 cups of flour, 2 of milk powder, 1 spoon of baking soda, pinch of salt and water. Then add any other goodies you want.  Into a frying pan and cook.

I got round to trying this at the weekend. A pleasant Sunday afternoon with a big bottle of red and the burner smoked up in the garden with a monster bag of self raising flour. I made several variations with fruit, sugar and chocolate chips and tried pancakes (just add an egg and go for a very runny mixture).

Results were in large good. The key is to not let the mixture get runny and it needs suprisingly little water to make a firm dough. The only thing I couldn't quite get the hang of was whether you needed to cook on oil and how to get the bannock cooked right through without burning either side too much.

Nice try Jonno! Looks good mate.

I dont use oil when I cook them, just flour the pot/pan Im using so the dough doesnt stick.

...but my bannocks always come out rock hard on the inside and doughy in the middle, so what do I know   :(
