Pignut
« on: May 28, 2009 »

It is revered as a Bushcraft food and is , apparently, hard to find, but we have found a couple of spots where it is very abundant. It is, of course, the Pignut. For those of you who don't know what it looks like, here it is. It tastes a bit like a waterchestnut, with perhaps a little hint of turnip. Quite nice really

The bit you eat is the bulb at the bottom.

Can you eat this raw or do you have to cook it?

This one we found at Belviour Forest Park beside Shaw's Bridge, they are very abundant there, we have also found them else where.
You won't see them again until about April, they seem to flower around the same time as Blue-bell's.
