Either on a commercial site, or wild camping, how do you choose where to pitch your tent?  i.e. flat, well drained, sheltered...?

If you are "wild camping" in say a forest always look up before you pitch as there might be some widow makers caught up in the branches of trees, beech have a habit of dropping their limbs and I have seen some crackers that have fell when on my travels and they are in places which would be perfect for a pitch, also always clear the ground and check for wasp's nest's and ant nest's.

check the site is not going to flood in the middle of the night with heavy rain

Also, don't pitch too near Mouldsy as his snoring will keep you awake all night, lol

I'd make sure its as flat as possible first dont want any lumps in my back, then make sure its not going to flood in the night, graident is important as well but if I have the first two I just make sure my head is pointing up and suffer it for a night!

What are you talking about???? I have never heard myself snore so it must be somebody else your thinking about.
